This is definitely my go-to for all of my “bring a covered dish” needs! The veggies and pasta and cheeses and salami….oh my! Most recently I made this for my son’s graduation party and I was sooooo busy I hardly took any pictures. The ones I did take were amazingly detailed, though. You can see the yummy goodness of all the Italian dressing dripping through!
Be sure to find yourself a really big mixing bowl. I had to borrow my mom’s, but you can get a nice one here. They are great to have for mixing big salads of all kinds. My mom has mixed her potato salad in hers for so many years I can’t even count. As you can see below, it gives you plenty of room to mix everything together.

My Best Pasta Salad
- 1 box of rotini tri-color or regular
- 1 bottle Italian dressing
- 1 package of cherry or grape tomatoes
- 1 bunch of broccoli cut into pieces
- 1 bunch of cauliflower cut into pieces
- 1 small can of black olives drained
- 1 8 oz. block of mozzarella cheese cut into chunks
- 1 8 oz. block of cheddar cheese cut into chunks
- 1/4 - 1/2 lb. of hard salami cut into chunks
Cut the broccoli, cauliflower, cheeses & salami into bite size pieces. If you choose grape tomatoes, sometimes they're pretty big, so you can cut those in half, if you'd like. Drain the black olives.
In a large pan, boil the rotini to your desired tenderness. When finished, drain and rinse immediately with cold water.
In an extra large bowl, add rotini. Mix in Italian dressing, broccoli, cauliflower, tomatoes, cheeses, salami, & olives.
Chill for at least an hour before serving.
